1 lb. ground beef, 95% lean
1 onion, medium size, chopped
1 green pepper, medium size, chopped
1 can tomatoes, diced
1 can corn, drained
1 - 2 tsp. chili powder (more or less, depending on how spicy you want it)
1/8 tsp. garlic powder
tsp. salt
pepper and sugar to taste
cornbread from scratch, or a mix, your choice
paprika
cup shredded cheddar cheese, optional
ketchup, optional
Peel, wash, and chop a medium size onion. Wash and chop the green pepper. Set both aside.
In a four-quart stainless steel casserole pan, scramble, and cook the meat until it is just about done.
Add the chopped onion and green pepper to the meat in the pan, stirring to blend. Cook together for about 10 minutes, on low heat.
Stir the tomatoes and corn into the meat mixture. If the tomatoes are not diced, chop them into bite size pieces. My package of meat was a little larger than one pound, so, to keep the moisture and flavor in balance, I added a little ketchup and a tad bit more of each spice.
Add chili powder, garlic powder, and salt. Pepper and sugar may also be added to your taste. Stir until well blended, and let simmer on low heat, for about 10 minutes, while you fix the cornbread.
Make your favorite cornbread, either from scratch or from a mix, and spread it over the top of the meat mixture. Use only enough cornbread to cover the meat, spreading it out to about half inch thick. Sprinkle the top of the cornbread with paprika and cheddar cheese (optional).
Bake in a preheated 375-degree oven until the cornbread is done. Cooking time will depend on the thickness of the cornbread; check for doneness.
